Fruit Scones

Makes 4 scones







Ingredients

20g (2tbp) spreadable butter
110g (1cup) plain flour
2tsp baking powder
1tbs golden caster sugar
pinch of salt
55ml (1/4cup) milk
1/4tsp orange exract
1/4cup mixed dried fruit
a little extra flour








Method 

Heat oven to 220 deg c.

Sift flour and baking powder into a bowl and mix in sugar and salt. Rub in butter until resembles bread crumbs. Using a knife mix in milk and orange extract and kneed into a ball. Use more milk if a little dry and then kneed in dried fruit.

Flour a board and roll into 3cm layer, cut into four circules using a cutter, brush with milk and place on baking parchment in the hot oven for 12-15min. Leave to cool. Serve with cream and jam.
