Bottomless Salmon Quiche

Serves 3-4



Ingredients

1.5 cups (200g) smoked salmon
Handful watercress
1/4 cup fresh dill
6 eggs
1 cup double cream
1 cup grated cheddar cheese
Zest of half a lemon
Salt
Celery salt
Cayenne pepper
Ground black pepper

Method

Heat oven to 180 degrees.

Chop salmon into 1cm pieces. Place in bottom of flan dish. Add finely chopped dill and watercress.

Combine eggs, cream and cheese in mixing bowl, zest of lemon and season with salts and peppers. Beat with whisk until frothy. Pour over salmon and herbs.

Place in oven for 40 minutes and leave to cool for 10 minuets before serving.
