Chicken Ratatouille
Serves 4-6
Ingredients
12 chicken thighs (skin on)
2 medium aubergines
2 red onions
2 medium courgettes
2 red peppers
3 cloves garlic - rough chopped
2 sprigs Rosemary
4 springs thyme
Handful of basil leaves (torn)
1 tin best quality cherry tomatoes
Glug of olive oil
Salt / pepper
Rough chop all veg and add to deep trayAdd herbsGlug olive oil and grind salt / pepper over - mix wellArrange chicken and pour over tomatoesMix again arranging chicken skin side up
Cover tray in foil and bake for 45min
Remove foil and increase temperature to 200deg c and bake until chicken is browned and cooked with the sauce reduced - about 30mins
